- 1 green chilli, chopped, optional
- 2 large tomatoes, grated
- 1 tbsp tomato paste
- 1 tbsp sweet paprika
- 1 tsp cumin
- ½ tsp turmeric
- ½ tsp salt
- ¼ tsp black pepper
- 1 cup water
- ½ cup cooked chickpeas, optional

Method
- Heat the oil in a wide, deep pan or pot over medium-high heat.
- Fry the onion until golden. Add sliced garlic and cook for about 1 minute.
- Add red pepper and optional chilli; cook for about 5 minutes until softened.

- Add water and bring to a boil. Lower the heat and simmer for 10–15 minutes until thickened.
- Add tofu and optional chickpeas. Cook for about 10 minutes to let the tofu absorb the sauce.
